Happy Valentine's Day!

I hope eveyone had a fantastic Valentine's Day! We enjoyed our little holiday at home...we usually don't go all out for Valentine's, but we also love having an excuse to celebrate something. It seems to makes life more fun if you get to celebrate the little things in life every once in awhile. :)

We made a stellar dinner - or, maybe I should say Kyle made the "stellar" part of the dinner which was fresh salmon cooked out on the grill on a cedar plank. YUM. I prepared the sides (rice, veggies & crescent rolls - Thanks Amy!)






After dinner, I made some Double Chocolate Chip Cookies to give away to my clients tomorrow! (Even though it will be one day late..oops!) These cookies are SO GOOD..let me know if you're interested in the recipe & I'll send it to ya!

Job Update & Pumpkin Cookies

Hello to my Long Lost Blog! It's been quite a while since I jumped online to upload pictures & write a post. Life has been super busy. My job(s) have picked up quite a bit...

Just a quick job update: I am currently working at a Pediatric Home Health company in Dallas called Cornerstone Pediatric Therapy. (It's a GREAT place to work, by the way!) If there are any SLP's out there looking for a job-- let me know, I'd love to chat with ya! At Cornerstone, I work with children and help strengthen their skills in a variety of areas ranging from articulation, auditory processing, language, and many other parts of speech therapy! I I absolutely love working with my sweet kiddos & families each day.  I also recently picked up a PRN position at Baylor Medical Center at Garland.  PRN basically means "as needed" so I pick up shifts on Fridays and randomly during the weekends to help out the other speech therapists.  At the hospital, we typically work with older adults in the Acute and Inpatient Rehab setttings.  Here, I am able to work with patients in areas such as: dysphagia (swallowing), language, speech, cognition (problem solving, safety awareness, memory, etc.) So, as you can imagine...my weekly schedule has picked up a little QUITE a bit! :) It's all so much fun, though. I'm just becoming a very busy lady! Right now, I'm glad to say that I'm at the time of my life where I'm grateful to be working as much as I am. I feel extremely blessed knowing that I have 2 jobs where I am able to interact with wonderful people on a daily basis.   I'm sure one day, I will want to cut back on work a bit when kiddos enter the picture (Lord willing!! I can't wait!), but for now..I know I am right where God has me for such a time as this.  So, that is that.  A little update for my few blog readers. (thanks for reading, Mom!)

Okay, now for the YUMMY part of this post.....

My mother-in-law makes the most delicious pumpkin recipes!
Pumpkin Cookies are one of our favorites in the Phillip household, so I thought I'd share a little festive fall treat with you all. ENJOY!




Pumpkin Cookie Recipe
Cream together in mixer:
2 cups sugar
2 cups margarine

Add:
1 16oz. can pumpkin
2 tsp. vanilla extract
2 eggs

Sift together & then add to creamed mixture:
4 cups flour
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. allspice
1 tsp. salt

Optional:
1 cup chopped walnuts
1 cup raisins

Drop by the teaspoon full on cookie sheet and bake 8 to 10 mintues at 350 degrees. Let cookies cool. Frost cookies with powdered sugaror cream cheese icing. Place candy pumpkin or candy corn on top. :)
